Easy Pesto Recipe!

INGREDIENTS

  • 3 cups of fresh basil

  • 1/3 cup of fresh parsley

  • 1/3 cup of toasted walnuts

  • 4 cloves of garlic

  • 1/3 cup of extra-virgin olive oil

  • 1/3 cup of parmesan cheese

  • salt & pepper to taste

  • 2 tablespoons of fresh lemon juice

HOW TO MAKE IT

  1. First, mince your garlic and roast in a low-medium heat pan with olive oil and your walnuts.

  2. DO NOT LET THE GARLIC BURN, let the walnuts and garlic have time to roast and flavors mingle. (2-3 min)

  3. Then add them into your food processor or blender, along with your basil, parsley, olive oil, parmesan, lemon juice, salt, and pepper, and blend.

  4. ALWAYS TASTE and then adjust, I personally love adding a little bit of lemon juice to bring out a refreshing zing to my pesto in the summer. Also adding parsley actually preserves that beautiful pesto green color for longer as basil can brown easily and bruise.

You can use this pesto on chicken, pasta, or even on your Caprese salad this summer! It’s easy and delicious!
