Brown Sugar Glazed Carrots!

INGREDIENTS

  • 2 lb peeled carrots

  • 1/4 cup brown sugar

  • 3 minced garlic cloves

  • 2 tbsp salted butter (melted)

  • 1 tbsp olive oil

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • Parsley, for garnish

HOW TO MAKE IT

  1. Preheat oven to 400F

  2. Cut carrots diagonally in about 1 1/2 in” pieces. (Halve thicker ends so they are all roughly the same width.)

  3. Toss in a bowl with your sugar, butter, garlic, oil, salt, and pepper, and then pour onto tray, and spread out.

  4. Roast 15 minutes, toss, then roast another 10 minutes until soft and caramelized on the edges. There should be plenty of glaze left on the tray.

  5. Toss carrots in the glaze, then finish by sprinkling parsley on top to garnish before serving to enjoy!
