Ginger & Spice

INGREDIENTS

  • 1 1/2 oz tequila ocho reposado

  • 3/4 oz Spicy Ginger Syrup

  • 1/2 oz fresh lime juice

  • 4 oz soda water, as needed to top off your glass

  • GARNISH: 2 springs cilantro, 1 lime wheel

HOW TO MAKE IT

  1. Make your spicy ginger syrup

    1. Spicy Ginger Syrup Ingredients

      • 1/2 cup sugar

      • 1 Thai chile, chopped

      • 1 tablespoon fish sauce

      • 2 teaspoons chopped fresh peeled ginger

      • 3 lime leaves

      • 3 cilantro stems, no leaves

      • 1/2 cup water

      1. In your small saucepan, combine sugar, chopped thai chili, fish sauce, ginger, lime leaves, and cilantro stems with water and bring to a boil.

      2. Reduce heat to low and simmer until sugar has dissolved and chiles have softened for about 5-8 minutes.

      3. Remove from heat and steep until syrup is at room temperature for about 1 hour.

      4. Strain syrup into a jar and refrigerate covered for 3 hours.

  2. Pour your tequila, spicy ginger syrup, lime juice, and then your ice into a cocktail shaker.

  3. Shake well and pour into a Collins glass filled with ice.

  4. Top with soda water; garnish with cilantro sprigs and a lime wheel to enjoy.
