Ginger & Spice
INGREDIENTS
1 1/2 oz tequila ocho reposado
3/4 oz Spicy Ginger Syrup
1/2 oz fresh lime juice
4 oz soda water, as needed to top off your glass
GARNISH: 2 springs cilantro, 1 lime wheel
HOW TO MAKE IT
Make your spicy ginger syrup
Spicy Ginger Syrup Ingredients
1/2 cup sugar
1 Thai chile, chopped
1 tablespoon fish sauce
2 teaspoons chopped fresh peeled ginger
3 lime leaves
3 cilantro stems, no leaves
1/2 cup water
In your small saucepan, combine sugar, chopped thai chili, fish sauce, ginger, lime leaves, and cilantro stems with water and bring to a boil.
Reduce heat to low and simmer until sugar has dissolved and chiles have softened for about 5-8 minutes.
Remove from heat and steep until syrup is at room temperature for about 1 hour.
Strain syrup into a jar and refrigerate covered for 3 hours.
Pour your tequila, spicy ginger syrup, lime juice, and then your ice into a cocktail shaker.
Shake well and pour into a Collins glass filled with ice.
Top with soda water; garnish with cilantro sprigs and a lime wheel to enjoy.
